You can use Zoom's live transcript feature

Zoom now offers artificial intelligence (AI) transcripts for the UNCSA campus. Transcripts are text synchronous with your meeting. If you are hosting a meeting, review directions in advance for setting up the Live Transcripts feature. Directions can be found on the Technology Support Knowledge Base.
